A natural mattress is built from renewable materials: natural latex tapped from rubber trees, organic cotton, and organic wool. A synthetic mattress is built from petroleum-based foams, mainly polyurethane, memory foam, and synthetic-latex blends, usually wrapped in polyester. Both can feel comfortable in a showroom. The difference shows up in three places you cannot see: what off-gasses into your bedroom, how many years it lasts, and how it sleeps.
Most mattresses sold in Canada are synthetic foam, and the label rarely tells you. The premium retail brands and the trendy bed-in-a-box names are, underneath the marketing, the same petroleum foam. Closing that gap comes down to three things: what each material actually is, what the science says about off-gassing and durability, and how to tell a genuinely natural bed from one that just says "natural" on the tag.

The difference is the raw material. Natural mattresses are made from materials that grow; synthetic mattresses are made from materials refined out of petroleum.
Natural materials are natural latex, organic cotton, and organic wool. Natural latex comes from the sap of the Hevea brasiliensis rubber tree, which is tapped without cutting the tree down. Organic cotton and wool make up the covers and comfort layers. These materials are renewable, breathable, and, when certified, traceable back to source.
Synthetic materials are petroleum products. Polyurethane foam and its slow-recovery cousin memory foam are the base of most conventional beds. "Synthetic latex" is styrene-butadiene rubber (SBR), a petrochemical made to imitate the feel of real latex at a lower cost. Covers are usually polyester. These are cheaper to produce, which is why they dominate the market.
There is also a middle category that causes most of the confusion: blended latex. It is marketed as "natural latex" but is often mostly synthetic SBR with only a small share of natural rubber. Certifications are the way to tell it apart from the real thing.

Off-gassing, durability, and certifications are where the real buying decision gets made, so each one gets its own section.
Synthetic foam off-gasses volatile organic compounds; natural latex produces minimal odour. That chemical "new mattress smell" is the VOCs venting, and it is specific to the foam. According to the Sleep Foundation, "VOCs are a specific byproduct of the synthetic foam manufacturing process," while most latex models produce minimal odour.
The emissions are strongest right after you open the bed. A mattress off-gassing emission study on PubMed found peak emission occurs in the first 24 to 72 hours after the mattress is unpackaged, then tapers.

The chemistry traces back to how the foam is made. The US Environmental Protection Agency notes that flexible polyurethane foam production emits hazardous air pollutants including 2,4-toluene diisocyanate (TDI) and methylene chloride, with methylene chloride making up over 98 percent of the industry's hazardous air pollutant emissions. A peer-reviewed study on VOC exposure in polyurethane foam production adds that TDI, methylene diphenyl diisocyanate (MDI), and dichloromethane "are of particular relevance due to their widespread use." Those are manufacturing figures, not what you breathe at home, but they explain why the smell exists at all and why natural latex does not carry it.

Every mattress sold has to pass a flammability standard, and how it passes matters. Conventional foam beds often meet the standard with chemical flame retardants. Natural beds use wool, which resists fire on its own.
In the United States, the open-flame standard 16 CFR Part 1633 pushed much of the industry toward chemical retardant treatments to help foam pass. Canada regulates mattress flammability separately, but the material logic is the same everywhere: petroleum foam burns readily, so something has to slow it down.
Wool solves this without added chemistry. It is naturally flame resistant and chars rather than melting, so a dense wool layer acts as a physical fire barrier. Memory foam traps body heat; natural latex and wool run cooler. This is the single most common complaint about synthetic foam, and it comes down to structure.
Memory foam is dense and closes around your body, which limits airflow and holds warmth against your skin. Natural latex has an open, coral-like cell structure that lets air move through it, and organic wool wicks moisture away instead of holding it. The result is a surface that sheds heat rather than banking it. Sleepers who switch from foam to natural materials most often notice the temperature difference first.

Natural latex and memory foam feel genuinely different, and neither is objectively better. Latex is buoyant and responsive; it pushes back and holds you closer to the surface. Memory foam is slow and conforming; it lets you sink and hugs the shape of your body.
Memory foam has one real advantage here, and it is worth stating plainly: that deep contour is very good at isolating motion, so a partner moving on the other side of the bed is less likely to wake you. Latex isolates motion well too, especially in a pocket-coil hybrid, but the sink-in memory-foam feel is its own thing.

Natural latex lasts far longer than synthetic foam, which reshapes the price comparison. Natural latex retains its integrity for 15 to 20+ years, an industry-standard figure for natural Talalay. Synthetic foam typically starts to sag and lose support within 5 to 7 years.
That gap is the whole cost argument. A synthetic bed usually costs less upfront, but if you replace it two or three times over the life of one natural mattress, the natural bed often costs less per year of use. It is also less waste, since a bed that lasts two decades keeps two or three foam mattresses out of the landfill.

"Natural" is not a regulated word on a mattress tag, so certifications are how you verify a claim instead of trusting it. This is the greenwashing problem buyers worry about, and it is solvable.
Start with the certification that fools the most people. CertiPUR-US certifies polyurethane foam, not natural materials. It is a real program run by the foam industry that screens polyurethane foam for certain chemicals. As CertiPUR-US describes it, certified foam is screened for substances classified as carcinogenic, mutagenic, or reprotoxic. A CertiPUR-US label means the foam is lower-emission foam. It does not mean the bed is natural.

Natural and organic are not the same thing. A synthetic mattress is not inherently dangerous, but it does off-gas VOCs, especially when new, and it uses petroleum foam and often chemical flame retardants. For most sleepers the exposure is low, but people who are chemically sensitive, have young children, or simply want to know what they are breathing tend to prefer natural materials. The honest answer is that "safe" depends on your tolerance and priorities, and natural materials remove the question entirely.

For most buyers who plan to keep the bed, yes, because of durability. A natural latex mattress costs more upfront but lasts 15 to 20+ years versus 5 to 7 for foam, so the cost per year is often lower. Be realistic about what you are buying, though. Natural materials are peace of mind about what is in your bed and a longer lifespan, not a guaranteed cure for poor sleep.
True latex allergy is a reaction to proteins in raw latex, and it is uncommon in finished mattresses because the latex is washed and encased under organic cotton and wool covers you never touch directly. Most people find natural latex a benefit for allergies, since it is naturally resistant to dust mites and mould. If you have a diagnosed latex allergy, talk to your doctor first, but for the vast majority of sleepers it is a non-issue.
